Peanut Butter Cookies

Peanut Butter Cookies

*Makes 14 Cookies

Ingredients

  • 1 1/2 cups Chickpeas, rinsed and drained

  • 12 Medjool Dates, pits removed

  • 1 teaspoon Vanilla Extract

  • 1/2 cup Peanut Butter

  • 1/4 cup ground Flaxseed

  • Pinch of salt, optional

Directions

  1. Preheat the oven to 350°F.

  2. In a food processor, add the chickpeas and process on high until very crumbly. Scrape down the sides of the food processor in between blends as needed.

  3. Add the remaining ingredients except the flaxseed and blend on high until the mixture forms a ball, scraping down the sides occasionally.

  4. Add the flaxseed and process until the flax is evenly distributed in the dough.

  5. Using damp hands, roll the dough into 1 1/2 inch balls. Wet hands in between each ball. Gently press down on the balls to form the shape of a cookie. To design the top, take a fork and run it under water, shake off excess liquid. Press down, wash the fork, and repeat to form a crisscross design.

  6. Bake for 15 minutes. Allow to cool.

  7. Enjoy!
